kerala chicken curry

All the members in my family likes chicken dishes. Every week  we have chicken   items served on our plates.One of the curries I often cook is the kerala chicken curry.
     
    KERALA CHICKEN CURRY.

TIME REQUIRED;   30 MINUTES.

INGREDIENTS:

Chicken- cut into small pieces-1 kg.
onion-3
tomato-2
Gingergarlic paste-1tbs
Green chillies-2,chopped.
Curry leaves-few
corriender powder-2tbsp
red chilly powder-2 tbsp
turmeric powder-1tsp
garam masala powder-1 tbsp
fennel powder -1tsp.
oil - for cooking
 salt for taste.

Method
Heat a non stick pan. Add 3 tbsp of oil into it. Once the oil is hot add the sliced onions. when the onions turns golden brown add ginger-garlic paste and chopped green chillies. saute it for few seconds.Add the tomatoes and cook it till it leaves oil on the sides of the container.Now add the corriender,chilli and the turmeric powders  and stir it well. Put the chicken pieces and little water into the pan and allow it to cook.when the chicken is half done sprinkle garam masala powder and fennel seed powder and cook it till it is done.Before serving it garnish it with curry leaves and chopped corriender leaves.

chicken methi kabab

From few days I was  anxious to prepare and taste something new and spicy. I came across a recipe to which I  modified to my liking. Hope you all will like it and will try it.

chicken methi kabab
Time required: 20 minutes plus marination time.

Ingredients:

chicken (cut into small pieces)-1
curd-1cup
cream-1/2 cup
ginger-garlic- greenchilli paste-2 1/2tsp
garam masala powder-1tsp
cashew paste-2tsp
kasoori methi-1tsp
salt- to taste
orange-red colour- a little


Method
     
     Beat the curd,cream ginger-garlic- green chilli paste and garam masala powder with a blender.mix the curd- cream mixture,seasonings and orange-red colour.Apply it to the chicken pieces.Marinate for one and a half hours.Arrange the chicken pieces onto skewers and grill till done.
